Shrimp Martini - Appetizer Extraordinaire

Living in Texas now and enjoying eating just about anything with a tortilla chip, this appetizer is full of Mexican flavors. This dish sets up like a seaside salsa that will excite your guests with nice pieces for shrimp, avocado, tomato, and a blend of hot Mexican flavors. We love to make this when we are having friends over to hang out in the pool, during the summer. Although this appetizer has quite a few ingredients its very easy to put together and well worth the effort.

Ingrediants

  • 1 Cup of Cold Water
  • 1 Cup of Roma Tomatoes Chopped in 1/4 Inch Pieces
  • 1 Cup of Onion Chopped in 1/4 Inch Pieces
  • 1 Cup of Cilantro Rough Cut
  • 1 Jalapeno Pepper - Seeded and Chopped Finely
  • 6 Tbsp of Avocado Chopped into 1/2 Inch Pieces
  • 3/4 Cup of Ketchup
  • 2 Tsp of Lime Juice
  • 1 Tbsp of Red Tabasco Sauce
  • 1 Tbsp of Green Tabasco Sauce
  • 1/4 Tsp of Worcestershire Sauce
  • 1/4 Tbsp of Cajun Chef Hot Sauce
  • 30/40 Medium Shrimp Cooked / Chopped and Chilled
  • 2 Shots of Tequila

Directions

Depending on the time and effort you want to put into the dish you can buy fresh shrimp and do the work to boil them yourself or buy precooked shrimp from the grocer. Personally if I am going to take the time to cook something I tend to do the work my self. Once your shrimp are cooked, chop the shrimp into nice size chunks and add them to a large stainless mixing bowl.

Chop and cut your tomatoes, onion, cilantro, jalapeno and avocado and add them all to the mixing bowl. Measure and add all of the liquids and add to the bowl. There is really not much too it, but the flavor will knock your socks off. One of the big keys to the dish is to gently fold the ingredients together. You don't want the avocado to get mushy as you mix all of the ingredients.

The Finish

Similar to the Bruschetta recipe, move the mixing bowl to the refrigerator so the flavors can meld together. I recommend at least 30-40 minutes. Serve this in a large Martini bowl or any nice glass bowl, so your guests can see the ingredients. I also recommend that you buy good firm tortilla chips to eliminate breakage. All in all, this will certainly be a dish that everyone will love and ask you for the recipe.
